Description

Finca milán is a family-owned farm in risaralda, colombia, that combines innovation and sustainability in specialty coffee production. The owner, julio césar madrid tisnés, is a third-generation coffee grower who implements experimental processing technologies, including cultured and nitro fermentation. The farm is a member of the café uba alliance, which unites farms committed to quality and responsibility.

Finca milán is located near the los nevados national park and places strong emphasis on natural resource preservation: protecting three water sources and maintaining biological corridors of bamboo forests. The farm is also involved in social projects, providing education and fair working conditions for local workers.

Colombia sakura is usually processed through natural or anaerobic fermentation, which helps unveil a rich and complex flavor profile. Natural processing involves sun-drying the coffee cherries with the pulp, imparting sweet and fruity notes. Anaerobic fermentation takes place in sealed tanks without oxygen, enhancing aromas and creating unique floral and citrus tones.

Origin

Colombia, often associated with emeralds and the narcotics trade, is, in fact, one of the leading giants in the coffee industry. Renowned worldwide, Colombian coffee is distinguished by its intriguing taste and high quality.

Initially considered a beverage for aristocrats, coffee in Colombia transformed into a true business for its residents. Additionally, Colombia's climate is ideal for coffee cultivation, featuring an equatorial zone, absence of frost, volcanic soil, and abundant Colombian sun, ensuring a bountiful harvest. Colombians plant coffee trees in the shade of taller plants, minimizing the need for intensive care. In 2011, UNESCO designated Colombia's Coffee Triangle as a World Heritage site.

Colombia exclusively cultivates Arabica, handpicking the beans but employing the 'wet' processing method for purification. Although this method is costly, coffee subjected to this process attains a higher class. This is why Colombian lots are highly prized worldwide.

General characteristics of Colombian coffee:

  • Moderate smoothness
  • Absence of bitterness
